Jalapeno Burger Balls

This recipe is easy to make and easy to double or triple. When you make it, do a big batch and freeze half of the formed burger balls for another night. We show you how to make this part of a great week of meals HERE... 1.5 lbs ground meat ( I like 1 lb grass fed ground beef and 1/2 lb ground pork from our free range pig)

1/2 of a sweet onion, chopped

3/4 tsp cream of tartar

1/4 tsp baking soda

1/2 tsp smoked paprika

1/4 tsp salt and pepper

1/2 jalapeno, seeded and chopped

2 Tbsp water

Combine ground meat in a bowl. Add 1 tsp sea salt, 1/2 tsp black pepper, and a 1/2 of a chopped sweet onion (Finely chop it if you have picky eaters. You can even process the onion in a blender with a smidge of water to really hide it but still get the great flavor!) Add 3/4 tsp Cream of Tartar, 1/4 tsp Baking Soda, 1/2 tsp smoked paprika, 2 Tbsp water, and jalapeno. Divide all this meat into balls that are about 2 inches in diameter. These freeze well at this point!

These can be grilled or seared in a saute pan, your choice. Regardless, they take less then 8 min to actually cook on a hot surface. Cook them on one side for about 4 min, then flip and let them finish. Move them to a plate and drizzle with Awesome Sauce.
