Haka House Meal Prep--- Mon-Thurs

If you followed through on the weekend prep, you are ready to tackle dinners this week like a champ! Here's how to put it all together...

Monday

Tonight is Jalapeno Burger Balls. These can be grilled or seared in a saute pan, your choice. Regardless, they take less then 8 min to actually cook on a hot surface.

Oven Potatoes are an easy side dish. Just dice as many potatoes as you want (leftovers work great for breakfast!) and toss them with Olive oil and salt. For extra yumminess, toss in some minced garlic. Cook on a baking sheet at 400* for about 25 min. Just before you take the potatoes out of the oven steam some sugar snap peas (add some organic butter and salt for Goodness sakes) and put the Burger Balls onto your heated surface, whether a grill or hot saute pan. Cook them on one side for about 4 min, then flip and let them finish. Move them to a plate and drizzle with Awesome Sauce.

Chicken Pot Pie is the meal tonight and all the hard work is already done for you!! Take the Pie filling and place it in a loaf pan. Combine in a bowl, 1.5 Cups almond flour, 1/2 tsp rubbed sage, 1/4 tsp sea salt, 1 egg and 2 T butter. Use a fork to stir it until it is all combined. You should be able to form it with your hands. If it is too dry, add a smidge of butter or water. If it is too moist, add almond flour one Tbsp at a time until the consistency is good. Roll this out on the counter and use a spatula to move it to the top of your loaf pan. Bake at 400* for 10 min. Reduce heat to 350* and cook another 10-15 min.

Serve this with asparagus which can cook right beside it! Just chop off the bottom ends and lay out in a baking dish. Drizzle with oil, sprinkle with salt and pepper. Pop this in the oven just like the pot pie.

Before you serve your plate, cut your acorn squash in half and place seeds down on a greased cookie sheet. When you remove dinner, put these in to cook for 30 min. You'll thank yourself tomorrow!

Wednesday:

Stuffed Acorn Squash! Saute some red pepper, zucchini, onion and mushrooms with ground meat. Add rosemary and thyme. Stuff acorn squash. Top with cheese if desired and bake.

Can serve with steamed broccoli.
