Chocolate Pudding- Delicious, Paleo, and Kid-Approved!

I love chocolate.

My kids love chocolate. I also love foods that my kids eat with reckless abandon. I love them EVEN MORE when I know that they are putting all kinds of good stuff - like good fats and antioxidants- into our bodies.

A week ago, chocolate came to the rescue.

We were at the beach and it was hot and I knew the kids needed to eat but none of us wanted anything heavy. My friend, Kristan, pulled this delicious chocolate pudding out of the cooler and our boys DEVOURED IT! Woot! They got good food in their bellies and we felt like awesome mamas.... can't beat that.

Chocolate Pudding Deliciousness

Ingredients:

12.5-13.5 oz full fat coconut milk **

1/4 C Hot water

18 deglet Noor Dates or 11-12 Medjool Dates

1/2 C raw cacao powder

1 Tbsp melted Coconut Oil

1/4 C Chia seeds

a couple grinds of Himalayan salt

optional: Enjoy Life! Chocolate chips

Put it all in a high power blender. I use THIS one. Blend it for about 45 sec or until smooth. Spoon into a glass container and refrigerate for at least 4 hours. You can top it with some delicious Coconut whipped cream, chocolate chips, or sliced strawberries. Eat with abandon!

 

** I use THIS coconut milk and it takes one and a half cartons. I find this one to be incredibly creamy, plus it's in cardboard!  But you can use a 13.5 oz standard can from the grocery store.
